Eric grew up in the Atchafalaya Basin in southern Louisiana, in a Cajun family where food was at the center. As a kid, he was running around under restaurant tables, surrounded by the flavors and rhythms of New Orleans and the surrounding region. He caught the cooking bug at 16 and cooked his way across the southern border of the U.S. before heading north to the Catskills earlier this year, bringing roots in Southern cooking, classic French cuisine, and a fun Japanese twist from his time running a ramen shop in Flagstaff.
